Breakfast Cheese Pie
- 3 medium Potatoes
- 1 Onion
- 1 Egg
- 1 1/4 cup shredded Swiss or Sharp Cheddar Cheese
- 4 Eggs
- 1 1/4 cup Milk or Half & Half
- 1/4 teaspoon Pepper
- 1/4 teaspoon Dry Mustard
- 1/4 teaspoon Paprika
- 1/4 teaspoon Cayenne Pepper
- 1/4 pound Bacon, cooked and crumbled
- 1/2 cup Broccoli, chopped (optional)
- Shred unpeeled potatoes and onion. Press liquid off by squeezing in paper towel.
- Add 1 beaten egg.
- Butter a 9-inch pie pan. Press potato mixture into pan to form a crust.
- Cover crust with grated cheese, bacon and broccoli.
- Beat 4 eggs with milk and all seasonings. Pour into crust.
- Bake at 375°F for 45 minutes.
