Pecan Pie

- 2 8-inch pie shells, unbaked
- 1/4 cup butter
- 1 cup firmly packed brown sugar
- 3 eggs
- 1/2 cup light corn syrup or molasses
- 1 - 1 1/2 cup broken pecans or walnuts
- 1 teaspoon vanilla
- 1 tablespoon (optional) rum
- 1/2 teaspoon salt
- Preheat oven to 450°F.
- Brown pie shells for 5 to 7 minutes. Allow to cool.
- Reduce oven heat to 370°F.
- Cream butter and brown sugar. Beat in one egg at a time.
- Fill the shells.
- Bake the pies for about 40 minutes or until a knife inserted in the filling comes out clean.
